Antique Cookie Recipe...

Today I'm sharing a recipe from my Auntie's VERY old cookbook...

 Oatmeal Refrigerator Cookies are simple to make...
Essentially you just mix them up... 
Wrap 2 logs of dough in wax paper...  
Chill... Slice and bake.

Homemade cookies anyone?
I didn't make these gluten free - so I didn't try any.
But My Love assured me they are good!

Oatmeal Refrigerator Crisps

1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 t. vanilla
1 t. salt
1 t. baking soda
1 1/2 c. flour
3 c. oatmeal
1 c. coconut


Cream shortening and sugars.  Add egg, vanilla & coconut.  Beat well.  
Add remaining ingredients slowly.  Mix well.  Form dough into 2 logs 
about 2" in diameter.  Wrap in waxed paper.  Chill (freezer for 1 hour).
Slice with sharp know about 1/4" thick.  Place on cookie sheet.
Bake at 350 degrees till lightly browned or they appear just ever so 
slightly underbaked (will finish baking when removed from oven).
Makes approx. 5 dozen.

I love old recipes and especially the ones that totally make sense. How nice to be able to take the roll out of the fridge and slice off enough for an after school or work snack. Thanks for sharing this old favorite. xo

Trade you a recipe. No Bake Cookies (search my blog) and try my recipe? Made with rice krispies, peanut butter and choc. chips; perhaps you have these on hand? And, gluten free!
Will make your recipe dough tomorrow for the fridge. Thankyou, Auntie... Slice and bake work well with a little toaster oven, too. Used to make a few at a time when Nora needed a treat :) and I didn't want to eat a gazillion myself. Plus, the kitchen smells divine with a tad of baking. The 'gardner' thanks you, too. D.
